Blueberry pancakes

BREAKFAST

So much for waking up early and hitting the gym. The weather today made it literally impossible to NOT sleep in. Booger, along with my alarm clock, went off at 5 am as usual but I could only manage to get myself up to let the pup out and proceeded to go directly back to bed. I didn't end up getting out of bed until 7:30am! I only had an hour and half to get Maddy and myself ready, make breakfast, and then be at work by 9am, plus I live 25 min away from work. I had my work cut out for me but still managed to make blueberry pancakes and get ready at the same time... how you ask? Well the pancakes called for some sitting time so after I got the batter ready I was able to put myself together and still had time for a yummy sinful breakfast with Newton and Maddy. Since I didn't get my workout in today I only had one pancake and took the leftovers to work.

Blueberry vanilla pancakes





For those interested, here's the recipe. It differs from the original recipe I got from allrecipes.com in that I added more milk, some vanilla extract, more butter, and brown sugar. Definitely not your figure friendly breakfast.

RECIPE
yields 6 pancakes

Ingredients

* 1 1/4 cups all-purpose flour
* 1/2 teaspoon salt
* 1 tablespoon baking powder
* 1 1/4 teaspoons white sugar
* 1 egg
* 1 1/4 cup milk
* 1/3 tablespoon butter, melted
* 1 cup blueberries
* 2 tablespoons brown sugar


1. In a large bowl, sift together flour, salt, baking powder and sugar. In a small bowl, beat together egg and milk. Stir milk and egg into flour mixture. Mix in the butter and vanilla and fold in the blueberries. Set aside for 1 hour.

2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
