DINNER
After a day like today I didn't feel like doing anything when I got home. Not even cook but in efforts to cut back on eating out I decided to put together some Asian chicken salads. I used the romaine hearts we had left, shredded Costco chicken, shredded carrots, and tossed it along with some mandarin oranges and fried onion flakes to top. For the dressing I used the light syrup from the can of mandarin oranges and added sesame oil, rice vinegar, balsamic vinegar, hoisin sauce, and toasted sesame seeds. The dressing was very tasty and the salad as a whole was pretty delicious. I will definitely have to save the recipe for this dressing.
Madelyn enjoyed her salad with ranch dressing instead. (Sorry for the low quality photos, these are from my iphone)
And of course to finish off dinner I had my "dessert," AB&J + Flax. After this picture was taken I found some left over granola and sprinkled it on top. It hit the spot!
I am sooooo looking forward to "Euphoric Sundays!" No work means that I can stay up later than usual and sleep in, although my definition of sleeping in is the equivalent of getting up early for others. Tomorrow Maddy and I and hopefully Newton will be going to the gym and then coming home to getting ready for our neighbor's little girl's 2 year old party. Madelyn should have a blast! Thanks for your interest. The dressing did come out very good. These are the ingredients that I used but bear in mind that these are rough estimates because I usually just eyeball it and season to taste. I used 1/3 the syrup from a can of mandarin oranges, a tablespoon of hoisin sauce, 2 tablespoon of olive oil, 1 tablespoon of sesame oil, 1.5 table spoon of balsamic vinegar, and 1 teaspoon of rice vinegar all mixed together. Hope you enjoy it.
